Gaziantep mutfağı denilince birçoğumuzun aklına baklava, kebab, fıstık gelir. Fakat Antep mutfağı bir hazine, bir sanattır. Kullanılan araç gereci ile, ürünü ile, yiyeni ile, pişireni ile ayrı bir kültür ve uygarlıktır. Mevsimine göre meyve ve sebzelerin, tahılların, salçaların, baharatların bir arada kullanıldığı son derece sağlıklı tencere yemeklerini de içeren zengin bir mutfaktır.
Ali Nazik yemeği Gaziantep yöresinde ait bir yemektir. Arapça’da “ala” güzel, “nazik” ise yemek demektir. Bu iki kelimenin birleşimi Ali Nazik yemeğine ismini vermiştir. Patlıcan ve sarımsağın bir araya getirdiği müthiş lezzet veren yemeğin tarifini sizler için anlattık…
Ali Nazik İçin Gerekli Malzemeler
300 gram kıyma
2 adet domates
2 adet biber
1 adet orta boy soğan
İsteğe göre maydanoz
Tereyağ
3 diş sarımsak
500 gram yoğurt
500 gram patlıcan
Sosu İçin
Biber salçası
2 yemek kaşığı tereyağ
Ali Nazik Yapılışı
Domates, biber, soğan keskin bir bıçakla çok ince kıyılır. (Rondoda da rendeleyebilirsiniz.) Tereyağını tavaya atın ve eritmeye başlayın. Kıyma ve ince kıydığınız malzemelerinizi orta ateşte suyunu salıp çekene kadar kavurun. Sarımsakları havanda biraz tuz ekleyerek ezin. Közlediğiniz patlıcanlanları kesme tahtasında iyice kıyın. Salça ve tereyağını 2-3 dakika kavurarak ocaktan alın. Sarımsak, patlıcan ve yoğurdu karıştırarak servis tabağına alın. Üzerine hazırladığınız etli karışımı yayın ve üzerine salçalı sosu gezdirerek servis yapın. Şimdiden afiyet olsun…
